Blue Frog Truffles is very excited to team up with Foodish, the Cooking School and function venue at the Belconnen Fresh Food Markets, to offer you the Full Truffle experience–a truffle hunt, followed by a hands-on cooking class in the Foodish Kitchen and a delicious degustation lunch with paired wines.
The morning starts with a truffle hunt at the Blue Frog Truffle farm. Learn about truffle cultivation and follow the dogs as they uncover black gold beneath the oak trees. Warm yourself up with a cup of truffled soup and other truffle treats before you bring freshly dug truffle to the Foodish Cooking School for your cooking class and lunch.
The degustation menu is created by Foodish’s Chinese-Australian chef David L. It is an exciting fusion of European fine dining elements with Chinese cuisine and attests to David’s passion for showcasing the cuisine of his heritage while remaining true to the integrity of the mighty truffle.
The entrée features Pork, truffle and crab steamed dumplings, pea emulsion, crisp beans and Asian herbs. This is followed by a Saffron, truffle and egg linguine with garlic-chilli king prawns and shaved truffle, and a Soy caramelized scotch fillet with truffle beure blanc, fondant potatoes, and a truffled spinach puree. For dessert we have a Caramelised lemon tart with a truffle milk sorbet.
If you choose, each course is accompanied by paired wines.
You will be involved in creating aspects of this menu as part of the cooking class experience. Fancy learning how to make truffled dumplings? What about making your own linguine using fresh truffled eggs? The Foodish cooking experience is always very informative and lots of fun. You will sit down to enjoy the fruits of your labour in Foodish’s attractive dining setting.
The truffle hunt begins at 10 am at Blue Frog Truffles and concludes at 12 noon. The cooking class in the Foodish Cooking School begins at 12.30 pm, with lunch being served by 2.30 pm. The drive from Blue Frog Truffles to the Foodish Cooking School is under 30 minutes.
